The Hot Honey Biscuit Sandwich: Why Only 30 a Day
The Hot Honey Biscuit Sandwich is a buttermilk cheddar biscuit, jalapeño American cheese, hot honey, a tallow-fried chicken thigh, dill pickles, and our Guajillo Garlic sauce. It's the item people drive across town for. It's also the one item on the menu we intentionally limit.
The biscuit is the reason. We make it fresh, in small batches, because a biscuit that sits around loses everything that makes it worth eating — the lamination, the crumb, the way it holds up against the honey without turning to paste. Past a certain volume, we'd be reheating instead of baking, and that's not a trade we're willing to make.
So we cap it at 30 a day. Some days it's gone by 1pm. We know that's frustrating if you show up at 6 and miss it — we're working on ways to expand capacity without cutting corners on the biscuit itself. Until then, it's first come, first served.
