Featured on NBC Chicago's Food Guy: Best Dishes for $12 and Under
We got some big news this week: Tallowing is part of NBC Chicago's latest round of The Food Guy's favorite dishes around Chicago for $12 and under. The list comes from Kevin Pang, one of the city's best-known food voices, and it's back by popular demand after the first round. Seeing our name on it, in Glenview, next to some of Chicago's longtime favorites, means a lot to our whole team.
Here's what Kevin had to say about us. He called Tallowing an intriguing new entry to the fried chicken field and pointed to what we're building the restaurant around: jumbo wings that are brined overnight, smoked, and then fried in beef tallow. He noted that the wings come out crunchier than most, and that the sauces are thoughtful and made in-house.
The part that made us smile most came from his 10-year-old. The Honey Butter Chicken Sandwich was the order, and Kevin described it as a sandwich that overflowed with sweet-and-spiced honey butter, a "three-napkin sandwich." That is exactly the sandwich we hoped it would be: a tallow-fried chicken thigh on a brioche bun with a full ounce of honey butter, and nothing else getting in the way.
None of this happens without the people behind the counter and in the kitchen, and without everyone who has come out to Waukegan Road since day one. If you found us because of this article, welcome. Come hungry, and bring extra napkins.
NBC Chicago also shared the feature on Instagram as a collab post with us, and you can find it on our Instagram page. To read what Kevin wrote in full, including the other spots on his list, use the link below.
